    Grilled Chicken and Vegetable Kebabs

    Ingredients
      • 1½   lbs  chicken breast, cut into 1-inch cubes
      • 1½   cup  Health Nut Original House Dressing
      • 1   zucchini, cut into 1” pieces
      • 1   yellow squash, cut into 1” pieces
      • 1   red onion, cut into wedges
      • 1   bell pepper, cut into 1” pieces
      • 1   tbsp  olive oil
      • Salt and pepper to taste
      For garnish:
      • finely chopped parsley
    Directions
    1. Add chicken to a bowl with dressing and toss to coat. Cover and refrigerate for at least 1 hour, or up to overnight.
    2. In a large bowl, toss together all of the sliced vegetables with the oil, salt and pepper to taste.
    3. Thread the chicken and vegetables onto wooden skewers.
    4. Heat grill to medium-high (~450˚F). Grill skewers for about 15 minutes, flipping every few minutes, until the chicken is cooked through.
    5. Serve with more dressing for dipping and fresh parsley for garnish.
