Grilled Chicken and Vegetable Kebabs
- 1½ lbs chicken breast, cut into 1-inch cubes
- 1½ cup Health Nut Original House Dressing
- 1 zucchini, cut into 1” pieces
- 1 yellow squash, cut into 1” pieces
- 1 red onion, cut into wedges
- 1 bell pepper, cut into 1” pieces
- 1 tbsp olive oil
- Salt and pepper to taste
- finely chopped parsley

- Add chicken to a bowl with dressing and toss to coat. Cover and refrigerate for at least 1 hour, or up to overnight.
- In a large bowl, toss together all of the sliced vegetables with the oil, salt and pepper to taste.
- Thread the chicken and vegetables onto wooden skewers.
- Heat grill to medium-high (~450˚F). Grill skewers for about 15 minutes, flipping every few minutes, until the chicken is cooked through.
- Serve with more dressing for dipping and fresh parsley for garnish.
