Buffalo Cauliflower Bowls
- 1 cups cooked white or brown rice
- 1 head of cauliflower, cut into florets
- 1 tbsp olive oil
- 1 pinch of salt
- ¼ cup buffalo sauce
- 1 cup sliced mini cucumbers
- 1 cup halved cherry tomatoes
- Health Nut Ranch Dressing
- green onions or chives
- 2 cups shredded cabbage or coleslaw mix
- ¼ cup mayonnaise
- 2 tsp apple cider vinegar
- ¼ tsp salt
- 1 pinch of pepper

Directions
- Preheat oven to 400˚F.
- Cook rice according to package directions.
- In a bowl, toss together cauliflower florets, oil and salt. Spread into an even layer on a sheet pan and roast for about 25 minutes, or until fork tender.
- While the cauliflower is roasting, stir together all slaw ingredients until well combined.
- Remove cauliflower from oven and toss with buffalo sauce.
- Assemble the bowls with rice, slaw, cauliflower, tomatoes, cucumber and green onions. Drizzle with ranch dressing just before serving.
