    Noodlerama Bowls

    Ingredients
      Chicken:
      • 1½   lb  chicken breast
      • 1   tsp  olive oil
      • Salt and pepper to taste
      • ¾   cup  chicken broth
      Bowls:
      • 16   oz  rice noodles, cooked according to package directions
      • 4   cups  romaine lettuce
      • 2   cups  shredded carrot
      • 1   cup  thinly sliced cucumber
      • ¼   cup  pickled ginger
      • Health Nut Spicy Asian Dressing
    Directions
    1. To make the chicken, heat 1 tbsp olive oil in a skillet. Season chicken with salt and pepper. Sear the chicken on one side for about 5 minutes, then flip and add in the chicken broth. Cover the pan with a lid and let cook for about 8-10 minutes, until the chicken reaches an internal temperature of 165˚F.
    2. If the pan starts to dry out, add more chicken broth or water as needed.
    3. Once the chicken is cooked through, remove from the pan and shred with two forks.
    4. Cook the rice noodles according to package directions.
    5. Assemble the bowls: Divide the romaine between 4 bowls. Top with shredded carrots, cucumber, rice noodles, shredded chicken and finish with pickled ginger. Drizzle with Spicy Asian dressing, then toss and enjoy.
