Buffalo Cauliflower Bowls

Silky… Creamy… Dreamy… Made with a rich buttermilk, garlic, and delicious perfection, this dressing was made for a #foodie moment. A tangy, crisp Ranch this good can escalate your everyday salad from basic to bougie.

    Buffalo Cauliflower Bowls

    Time: 40 minutes

    Serves: 2-3
    Ingredients
      • 1   cups  cooked white or brown rice
      • 1   head  of cauliflower, cut into florets
      • 1   tbsp  olive oil
      • 1   pinch  of salt
      • ¼   cup  buffalo sauce
      • 1   cup  sliced mini cucumbers
      • 1   cup  halved cherry tomatoes
      • Health Nut Ranch Dressing
      For garnish (optional):
      • green onions or chives
      Slaw:
      • 2   cups  shredded cabbage or coleslaw mix
      • ¼   cup  mayonnaise
      • 2   tsp  apple cider vinegar
      • ¼   tsp  salt
      • 1   pinch  of pepper
    Directions
    1. Preheat oven to 400˚F.
    2. Cook rice according to package directions.
    3. In a bowl, toss together cauliflower florets, oil and salt. Spread into an even layer on a sheet pan and roast for about 25 minutes, or until fork tender.
    4. While the cauliflower is roasting, stir together all slaw ingredients until well combined.
    5. Remove cauliflower from oven and toss with buffalo sauce.
    6. Assemble the bowls with rice, slaw, cauliflower, tomatoes, cucumber and green onions. Drizzle with ranch dressing just before serving.
