Chinese Chicken Salad

Sesame has a secret: combining sesame, onion, and apple cider vinegar is the key to its subtle, sweet flavor.  A delish dressing with wonderful flavor and texture, Sesame knows how to dress (your salad) to impress.

    Chinese Chicken Salad

    Time: 35 minutes

    Ingredients
      Chicken:
      • 1½   lbs  chicken breast
      • 1   tsp  olive oil
      • Salt and pepper to taste
      • ¾   cup  chicken broth
      Salad:
      • 2   heads  romaine lettuce, chopped
      • 1   cup  dry chow mein noodles
      • 2   cups  shredded carrots
      • ¼   cup  pickled ginger
      • Health Nut Sesame Dressing
    Directions
    1. To make the chicken, heat 1 tbsp olive oil in a skillet. Season chicken with salt and pepper. Sear the chicken on one side for about 5 minutes, then flip and add in the chicken broth. Cover the pan with a lid and let cook for about 8-10 minutes, until the chicken reaches an internal temperature of 165˚F.
    2. If the pan starts to dry out, add more chicken broth or water as needed.
    3. Once the chicken is cooked through, remove from the pan and shred with two forks.
    4. Assemble the salad with romaine, shredded chicken, chow mein noodles, shredded carrots and top with pickled ginger. Drizzle with sesame dressing and enjoy.
